Actually certain NES games sounded better when they ported from the FDS to cartridge format. Simon's Quest sounded great when the game was brought to America as a cartridge. Its got that bassy Konami sound i'm used to hearing in previous U.S. Konami game carts. But when I heard the FDS version - its sounds as if its missing some of that bassy drum.

I've uploaded the complete soundtracks for both versions if you'd like to compare. I also talk about some of the differences in the video descriptions.

I definitely like the US version more- the original FDS version had an extra channel of 64-step wavetable synthesis, but they didn't utilize it all that well or interesting in this case. Despite the extra channel it's more basic. They must've realized that simply removing that channel would have made the music especially thin, so they tweaked it and compensated by adding more percussion and things like echo + reverb effects.
