The "Unknown Test.n64" rom's screen header text says "Dolphin Controller Test". I suppose they were testing GAMECUBE prototye controllers using the N64.
The black carts say something I can't make out: "EEJINGU cassette". No matter how hard I try, I can't reverse EEJINGU into anything meaningful.
The EMI cart says "FURASSHU cassette"... which seems to mean "Flash", as the big GB64 cart also says FURASSHU in the blue label, and these are known to be flash based.
Interestingly, the big GB64 cart says "KAATORIJJI" (cartridge) instead of "KASETTO" (cassette) like the smaller ones.
I can only do basic kana/syllabics reading, so all the kanji/logograms are out of my reach

EDIT: could the u64 demo have anything to do with the touted Unreal N64 port?
EDIT2: The U64 rom's header says AGING ROM in the title area... I guess that matches the mysterious "EEJINGU", making it japanese, so most probably unrelated to Unreal or anything from the west, both because of the language and that 1996 date on the label...
